Review and update GOV.UK header documentation for removal of service name and navigation #4957

What
In GOV.UK Frontend v6, we will be removing the ability to have a service name and navigation in the GOV.UK header component. For reference, the PR for that removal is at: alphagov/govuk-frontend#6423
This does not include removing Nunjucks macro documentation, which is automatically included from GOV.UK Frontend.
Why
Including the service name and navigation in the header was deprecated and replaced by the Service navigation component.
