Merge docker compose setup

Merge all dc-*.yml files and consolidate into a comprehensive workshop lesson that covers the following topics:

• start codespace
• run planetiler to convert pre-loaded data into tiles
• start martin with the generated data
• run maputnik locally in another service, but it should be behind the same hostname and port - so possibly proxy via nginx
• start postgres service with postgis
• use osm2pgsql to import walkways and benches into the postgres service
