Feat/add percy for visual regression testing

[development day spike]

Added Percy for some overall visual regression testing
Includes:

• Static data stubbing using Cypress;
• Single (so far) screenshot through Percy to ensure UI stays identical to-the-pixel when loading identical data;
• Uploads build automatically to Percy Cloud where the screenshots can be diffed and any change(s) highlighted.
