What
Re-enable macos runner on the ledger-emulator.yml workflow, removed in #2276
Why
When we had to bump the macos runners from macos-13 to macos-15 due to macos-13 runners deprecation, the ledger-emulator workflow started failing for macos-15 (example here).
While we managed to make the remaining macos jobs run, that one remains unstable so we disabled it temporarily in order to land the fixes to as many jobs as possible.
